In screenshots where you can spy on other races. What kind of information do the spies give you? Can they sometimes help you influence that civ, like swinging an election one way, or convincing their citizens an alliance with you would be a good idea?

Espionage gives you information about the other race. If you have a high enough espionage level, you will be able to steal techs from the races that you are spying on. It can also prevent certain nasty random events.

Destabilization will lower the morale of the other race, which in sufficient quantity can trash their economy and make them more susceptible to cultural influence.

Destabilization is a nasty weapon. Just wait until one of the AI races uses it against you. If your economy is going down the tubes and you can't figure out why it may be time to start putting some funds into propaganda.
