What I'd like to see fixed is all the freaking minidumps, crashes and desynchs. But yeah, I think that's what about everyone else here would like to happen, so I might as well shut up.

I'll be posting update notes soon. We haven't gotten enough data to look into the reported desync issues, so don't expect anything on that front.

Would there be a way to at least increase the amount of data generated by minidumps/desyncs, so you can track down the problem(s) more easily?

Unfortunately no. Leaving desync capture on kills performance to the point of being unplayable due to the amount of data being captured.
