How can you change either the background color of the universe or the resource/star color? They are black on grey and very hard to see on a 4k monitor.

Can you share some screenshots of what you're seeing?
I think the background color randomly resets upon loading the game. Just reload your savegame a few times and it should change.
I kinda wish at galaxy selection we could pick one.
It doesn't. It stays the same all the time.
